Recipe #8 – Dave’s Ribs with Coleslaw!

 

Let’s have a braai!

1,5kg of Spare Ribs, (or the your choice of ribs).

Get rid of the sinews etc, (senhinnor), and then boil the ribs on low heat, just covered with salted water for approx. 30-40 mins depending on how thick they are. When finished the meat should be easy to separate from the bones.
Let it stay in the pot for about an hour to soak it up, this could be done the day before putting them on the grill!

Ingredients for the Glaze:

  • 1dl of mashed tomatoes
  • cummin
  • sea salt
  • honey
  • crushed garlic
  • black pepper
  • chili
  • red pepper powder

Mix all the above, use more of the things you prefer.

For oven baking the ribs:
Put the ribs, bones up, on the oven shelf at 250 degrees C for 10 mins. Take them out and “paint” them with the glaze, turn them over and go for another 10 mins. Put another layer of glaze on before serving!

For the braai(!):
Grill them carefully for about 5 mins per side. Put glaze on in the end and before serving!

Coleslaw ingredients:

  • 1/2 of a small cabbage head
  • 1 carrot
  • 1 tea spoon dijon mustard
  • 1 dl mayonaise
  • 1 dl creme fraiche
  • 1 tbsp white wine vinegar
  • 1 tbsp honey
  • black pepper
  • sea salt

Peel and roughly shred the carrot. Fine shred the cabbage and put them in a bowl with a little salt in for 15 mins. Mix the other ingredients in another bowl. Squeeze the water from the veggies so they become soft and then mix it all together!

PS. I need to be smart about this now and will most likely not do the Challenge #8 this week. Body needs rest, will let you guys know how me and Dave have planned the coming Sectionals week to make these challenges doable!
