Recipe #8 – Paleo Cheesecake!

Ingridients – 10 portions(!)
Per serving: 430 kcals, 9g Protein, 42g Fat, 4g Carbs*
(Excluding berries).

  • 300g of Cream Cheese
  • 6 egg yolks
  • 1 tbsp grounded Vanilla Pod
  • Stevia (sweetener)
  • 130g coarsly grounded Almond Flour (if you make it your self you don’t need to fine grind it).
  • 5dl Cream
  • 40g Walnuts
  • Your selection of fresh Berries

Lightly whip the cream cheese and in another bowl whip the egg yolks til they are firm. Slowly add and mix it together with the cheese.
Turn the cream into whipped cream and mix it with the above.

Add the vanilla and slowly add stevia, but be careful to not overuse it. Crush the walnuts and add them into the batter.

Take a round oven form that has a removable margin. Fill the bottom with half of the almond flour, then poor the batter into the form. Try to make the surface quite even and sprinkle the rest of the almond flour over it.

Put it in the freezer, and 4-5 hours later, voíla!

Before Serving:

Let the cake thaw a bit, then remove the margin of the form, cut into preferred peices, (HUGE for Yogi), and serve with the fresh berries!
